Description

A refreshing creamy dessert made with full-fat coconut milk and fresh orange juice.


Ingredients

  • 1 can full-fat coconut milk
  • 2 fresh oranges (juice and zest)
  • 1/4 cup granulated sugar or maple syrup
  • 1 tablespoon gelatin powder or agar-agar powder
  • 1 teaspoon vanilla extract
  • To taste optional garnish (toasted coconut flakes, orange segments, fresh mint)

Instructions

  1. Thoroughly wash the oranges and zest them using a fine grater or microplane, avoiding the bitter white pith. Halve the oranges and juice them, straining out any pulp or seeds to get about 1/2 cup of fresh orange juice.
  2. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of the cold orange juice and let it sit for 5 minutes to bloom. If using agar-agar, skip this step and prepare it in step 3.
  3. In a medium saucepan, combine the full-fat coconut milk, remaining fresh orange juice, granulated sugar (or maple syrup/agave nectar), and orange zest. Heat over medium-low, whisking continuously until the sugar is dissolved and the mixture is warm.
  4. Remove the saucepan from heat and add the bloomed gelatin, whisking until completely dissolved. If using agar-agar, add it now and simmer for 2-3 minutes, whisking to ensure it’s fully dissolved.
  5. Stir in the vanilla extract and pour the mixture through a fine-mesh sieve into a clean bowl or measuring cup to remove any bits of zest or undissolved gelatin.
  6. Pour the mixture into individual serving glasses or a larger bowl. Chill in the refrigerator for at least 3-4 hours, or preferably overnight, until fully set.
  7. Once set, garnish with toasted coconut flakes, fresh orange segments, or mint before serving. Enjoy your refreshing, creamy dessert!
