Description

Ingredients

  • 1 cup dried red kidney beans (soaked overnight)
  • 1 cup long-grain white rice
  • 1 medium onion (diced)
  • 1 green bell pepper (diced)
  • 2 stalks celery (diced)
  • 8 oz smoked sausage (sliced)
  • 3 cloves garlic (minced)
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 4 cups low-sodium chicken broth

Instructions

  1. Soak the red kidney beans overnight in water, then drain.
  2. In a large pot over medium heat, sauté diced onion, green bell pepper, and celery in a splash of oil until soft (about 5 minutes).
  3. Stir in minced garlic and sliced sausage; cook until the sausage begins to brown.
  4. Add Cajun seasoning and bay leaves, then pour in chicken broth and bring to a simmer.
  5. Incorporate soaked beans into the pot, cover, and simmer for about an hour until beans are tender.
  6. Prepare long-grain rice according to package instructions.
  7. Serve a generous scoop of beans over rice and enjoy!
