Description
A refreshing salad made with fresh vegetables and a simple dressing.
Ingredients

- 2 cups fresh cucumbers (chopped)
- 1 cup sweet bell peppers (mixed colors, sliced)
- 1/4 cup red onion (diced)
- 1 cup cherry tomatoes (halved)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar or apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash and chop cucumbers into bite-sized pieces. Slice bell peppers into thin strips.
- In a large bowl, combine chopped cucumbers, sweet peppers, diced red onion, and halved cherry tomatoes.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
- Drizzle the dressing over the mixed veggies and toss gently until well-coated.
- Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
