Ingredients

  • 1 lb sirloin steak, cut into bite-sized cubes
  • 1 lb baby potatoes, halved
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the potatoes – Start by heating olive oil in a large skillet over medium heat. Add the halved baby potatoes cut side down. Let them cook undisturbed for several minutes so they develop a golden crust. Stir occasionally and cook until the potatoes are fork-tender, about 10–12 minutes. Once done, remove the potatoes from the skillet and set them aside. This step ensures they stay crispy rather than steaming in the pan.
  2. Sear the steak bites – In the same skillet, add a little more oil if needed and increase the heat slightly. Add the steak cubes in a single layer. Avoid overcrowding the pan so each piece gets a proper sear. Cook for about 2–3 minutes per side until browned and cooked to your preferred doneness.
  3. Add garlic butter – Reduce the heat to medium and add butter and minced garlic to the pan. Stir gently so the steak bites get coated in the melted garlic butter. Sprinkle in paprika, thyme, salt, and black pepper. The garlic will quickly release its rich aroma, creating the signature flavor that makes garlic steak bites and potatoes so irresistible.
  4. Combine everything – Return the potatoes to the skillet and toss everything together. Let the potatoes soak up some of that buttery garlic sauce while the steak finishes cooking.
  5. Garnish and serve – Sprinkle freshly chopped parsley over the dish and serve immediately while everything is hot and sizzling.
