Birria Quesadillas

Description

Delicious Birria Quesadillas made with slow cooker birria meat and cheese.


Ingredients

Scale
  • 4 large whole wheat tortillas
  • 1 1/2 cups shredded Monterey jack cheese
  • 8 ounces sliced mushrooms
  • 2 cups Slow Cooker Birria Meat
  • toppings of choice

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Dip a large tortilla in Birria broth (or brush onto both sides of the tortilla) and place on the warm skillet.
  3. Add cheese, sliced mushrooms, and about 1/4 cup of the Birria meat to one side of the tortilla.
  4. Fold the other side of the tortilla over.
  5. Toast each side of the quesadilla for about 1-2 minutes each.
  6. Repeat with the other tortillas and remaining ingredients.
  7. Cut the quesadillas into sections; use any leftover broth as a dipping sauce!

Notes

  • For toppings, consider using fresh cilantro, onions, or avocado.
