- 1/2 cup Shredded Cheese (for creaminess)
- 3 tablespoons Butter (or olive oil for a healthier choice)
Instructions
- In a large mixing bowl, combine your mashed potatoes, all-purpose flour, baking powder, salt, and black pepper until a soft dough forms.
- Fold in chopped green onions and shredded cheese until evenly distributed throughout the mixture.
- Transfer dough to a floured surface, divide into eight equal portions, and shape into patties, about ½ inch thick.
- Lightly dust each patty with flour for a crispier texture when frying.
- Heat a skillet over medium heat and add enough butter to coat the bottom.
- Fry each cake for 4-5 minutes on one side until golden brown, then flip and fry the other side.
- Remove the cakes using a slotted spatula and place them on paper towels to drain excess grease.
- Serve warm as a snack, breakfast, or side dish.
Notes
