- 1 cup cottage cheese (full-fat or low-fat)

- 1/2 cup fresh blueberries
- 1/4 cup whole milk
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In one bowl, whisk together flour, baking powder, and sugar until combined.
- In another bowl, mix cottage cheese, eggs, and milk until smooth.
- Gently combine wet and dry ingredients; fold in blueberries carefully.
- Spoon batter into muffin tins until about 3/4 full.
- Bake for 20-25 minutes or until golden brown.
Notes
- For a sweeter muffin, you can add more sugar or a sprinkle of cinnamon.
- These muffins can be stored in an airtight container for up to three days.
