Description

This delicious gluten-free quiche is filled with fresh spinach, leeks, and creamy cheese for a delightful meal.


Ingredients

  • 1 gluten-free pie crust (store-bought or homemade)
  • 2 cups fresh spinach
  • 1 cup leeks (sliced)
  • 8 oz cream cheese (softened)
  • 4 large eggs
  • 1/2 cup milk (dairy or dairy-free)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh herbs (optional, e.g., thyme or dill)

Instructions

  1. Preheat your oven to 375°F (190°C). Fit the gluten-free pie crust into a pie dish and poke holes in the bottom.
  2. In a skillet over medium heat, add olive oil and sauté sliced leeks until translucent (about 5 minutes). Add spinach and cook until wilted.
  3. In a mixing bowl, combine softened cream cheese, eggs, milk, salt, and pepper until smooth.
  4. Fold in the sautéed spinach and leeks into the egg mixture until evenly combined.
  5. Pour the filling into the prepared crust and spread evenly.
  6. Bake for 30-35 minutes or until lightly golden brown and set in the center. Let cool slightly before slicing.
