Description

A delicious creamy pasta dish featuring campanelle pasta, sun-dried tomatoes, and Parmesan cheese.


Ingredients

  • 8 ounces campanelle pasta
  • 1 tablespoon unsalted butter
  • 2 teaspoons garlic, minced
  • 1 bag (3 ounces) sun-dried tomatoes, chopped (oil-packed drained, or dry rehydrated)
  • 1 cup (8 ounces) chicken broth
  • 1 tablespoon homemade Tuscan seasoning
  • 1 cup (238 g) heavy whipping cream
  • 1 cup (100 g) Parmesan cheese, grated
  • Kosher salt, to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. In a large skillet over medium heat, melt butter.
  2. Stir in garlic and sun-dried tomatoes. Cook 30 to 60 seconds.
  3. Pour in chicken broth and add Tuscan seasoning. Stir to combine.
  4. Stir in heavy cream and bring to a gentle simmer. Simmer for 5 to 7 minutes, or until thickened.
  5. Whisk in Parmesan cheese until melted and smooth.
  6. Stir in cooked pasta, coating it in the creamy sauce.
  7. Remove from heat. Garnish with fresh herbs if desired.
