Description

Delicious lime cookies with white chocolate chips, perfect for any occasion.


Ingredients

  • 2 ½ Cups Flour
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 Cup Butter (unsalted, softened)
  • ½ Cup Sugar
  • ½ Cup Brown Sugar
  • 1 Large Egg
  • 2 Limes (juice)
  • ¼ teaspoon Vanilla Extract
  • 2 Limes (zest)
  • 6 Ounces White Chocolate Baking Chips (vanilla, Choc-Au-Lait)

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a bowl, combine flour, baking soda, and salt; set aside.
  3. In a large bowl, cream together the butter and sugars until light.
  4. Beat in the egg, lime juice, and vanilla until smooth.
  5. Slowly add flour mixture until combined.
  6. Stir in the lime zest and white chocolate or vanilla chips.
  7. Drop rounded spoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry.
  8. Bake for 8-9 minutes or until golden brown around edges. Do not overcook! Cookies will be plump.
  9. Cool for several minutes on cookie sheets before transferring to rack to cool completely.
