Description

A refreshing chicken salad with grapes, perfect for sandwiches or a light meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup seedless grapes, halved
  • 1/2 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • to taste salt and pepper
  • 1/4 cup walnuts or pecans, chopped (optional)

Instructions

  1. If you don’t have leftover cooked chicken, boil or bake chicken breasts until cooked through. Once cooled, shred the chicken into bite-sized pieces.
  2. In a large mixing bowl, combine the shredded chicken, halved grapes, chopped celery, and red onion.
  3. In a separate small bowl, whisk together mayonnaise and Dijon mustard until smooth. Add salt and pepper to taste.
  4. Pour the dressing over the chicken mixture. Gently toss until everything is well-coated.
  5. If using walnuts or pecans, fold them into the salad for an added crunch.
  6. For the best flavor, let the salad chill in the fridge for 30 minutes before serving. Enjoy it in a sandwich, on a bed of lettuce, or as is!
