Delicious and healthy cookie dough protein bars that are easy to make and perfect for a snack or post-workout treat.
Ingredients

- 1/2 cup almond butter
- 1 1/4 cups vanilla protein powder
- 3/4 cup oat flour
- 3/4 cup + 2 tablespoons water
- 1 cup chocolate chips
Instructions
- Line an 8 x 8-inch baking dish with parchment paper and set aside.
- In a food processor, combine all the ingredients, except for the chocolate chips, regularly scraping down the sides.
- Fold through the chocolate chips.
- Transfer into a lined baking dish and press down into the pan.
- Refrigerate for at least an hour to firm up.
- Remove the cookie dough protein bars from the refrigerator and slice into 12 bars.
Notes
- For a sweeter option, consider using Medjool dates instead of oat flour.
- Adjust the water amount for desired consistency.
- Chocolate chips are optional and can be substituted with nuts or dried fruits.
