Description
A delicious cheese ball made with cream cheese, cheddar cheese, and a mix of cranberries and pecans, perfect for serving with crackers.

- 2 (8 oz) Cream Cheese, Softened
- 1 cup White Cheddar Cheese, Shredded
- 1 cup Dried Cranberries, Roughly Chopped
- 1 cup Pecans, Finely Chopped
- 2 tbsp Fresh Chives, Chopped
Instructions
- In a large bowl, beat together softened cream cheese, shredded cheese, 1/2 cup chopped dried cranberries, 1/2 cup chopped pecans, and 1 tbsp chopped chives.
- Scrape down sides of the bowl, bringing the mixture to the center. This will make about 3 cups.
- Set out a piece of 10″ x 10″ plastic wrap.
- Using greased hands, form the cream cheese mixture into a ball and place onto the plastic wrap. Bring the edges of the plastic wrap around the cheese ball to seal. Let chill in the refrigerator until firm.
- On a plate, combine 1/2 cup chopped dried cranberries, 1/2 cup chopped pecans, and 1 tbsp chopped chives.
- Remove the cheese ball from the refrigerator and unwrap.
- Roll into the mixture on the plate, pressing slightly into it to cover the cheese ball entirely.
- Let sit at room temperature to soften for about 20 minutes before serving.
- Serve with crackers.
Notes
- For extra flavor, add spices or herbs to the cream cheese mixture.
- This cheese ball can be made a day in advance.
