- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 pound lean ground turkey
- 1 bell pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon tomato paste
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup low sodium chicken broth
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes until softened.
- Stir in minced garlic and cook for 1 more minute until fragrant.
- Add ground turkey and cook for 6–8 minutes, breaking it up as it browns.
- Stir in bell pepper, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 2 minutes.
- Add tomato paste and fire-roasted tomatoes. Stir and let cook for 2 minutes to deepen the flavor.
- Pour in chicken broth, black beans, and kidney beans. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 25 minutes, stirring occasionally.
- Taste and adjust seasoning. Serve warm with toppings like avocado, Greek yogurt, or cheese.
Notes
- This chili can be customized with your favorite toppings.
- For a spicier version, add jalapeños or cayenne pepper.
