Ingredients

- 2 cups fresh cremini and shiitake mushrooms, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tsp sweet paprika
- 4 cups vegetable broth
- 1 cup sour cream (full-fat preferred)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Add minced garlic and sliced mushrooms; cook until mushrooms shrink and release moisture.
- Stir in sweet paprika for flavor infusion.
- Pour in vegetable broth, bring to a gentle boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and stir in sour cream until smooth. Season with salt and pepper.
- Serve hot, garnished with fresh parsley if desired.

- This soup is best served fresh but can be stored in the refrigerator for up to 3 days.
