Description
A deliciously cheesy pasta bake with spinach and artichokes.
Ingredients

- 8 oz short pasta (penne or fusilli)
- 3 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 4 oz cream cheese, softened
- 1 cup sour cream
- 2 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt to taste
Instructions
- Cook the pasta in boiling salted water until al dente, then drain.
- In a skillet over medium heat, sauté garlic in olive oil until fragrant.
- In a bowl, mix cream cheese, sour cream, Parmesan cheese, Italian seasoning, sautéed garlic, and salt until smooth.
- Fold in spinach and artichokes until well combined.
- Gently combine the cheesy mixture with the cooked pasta in a greased baking dish.
- Top with mozzarella and bake at 350°F for 25-30 minutes or until golden brown.
Notes
- This dish is best served hot.
- Feel free to add additional vegetables or protein as desired.
