Description

  • 22 kg Whole Turkey Breast (bone-in)
  • 2 tbsp Unsalted Butter
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Dried Thyme
  • 1 tsp Dried Sage
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 small Onion, quartered
  • 1 small Apple, quartered
  • 1 stalk Celery, cut into chunks
  • 4 cups Day-Old White Bread, cubed
  • 2 tbsp Unsalted Butter (for dressing)
  • 1 small Finely Chopped Onion
  • 2 stalks Finely Chopped Celery
  • 1 clove Minced Garlic
  • 1 tsp Dried Sage
  • 1 tsp Dried Thyme
  • 0 tsp Salt
  • 0 tsp Black Pepper
  • 1 cup Chicken Broth, preferably low sodium
  • 1 Lightly Beaten Egg

Instructions

  1. Preheat your oven to 180°C (350°F). Spread the bread cubes on a baking tray and toast them for about 10 minutes, until they are lightly crisp.
  2. In a large skillet, melt the unsalted butter. Add finely chopped onion, celery, and minced garlic, sautéing for 5-7 minutes until they become soft and fragrant. Stir in sage, thyme, salt, and pepper, then remove from heat.
  3. Pour the sautéed mixture over your toasted bread cubes. In a separate bowl, whisk the chicken broth with the lightly beaten egg and fold this moist mixture into the bread until it’s well combined and slightly wet.
  4. Blend together the remaining unsalted butter, olive oil, salt, pepper, thyme, sage, garlic powder, and onion powder. Rub this flavorful mixture generously over the turkey breast and its cavity.
  5. Place the seasoned turkey on a roasting rack inside a roasting pan. Add a splash of broth or water at the bottom, then tent the turkey loosely with foil and roast it in the oven.
  6. Transfer the prepared dressing into a buttered baking dish. Cover it with foil and bake alongside the turkey for 25 minutes. Uncover and bake for an additional 15 minutes until it’s deliciously crisp on top.
  7. Roast the turkey for about 1½ to 2 hours, or until its internal temperature reaches 75°C (165°F). Once done, let the turkey rest for 15 minutes before carving.
  8. Carefully carve the turkey and arrange it alongside the dressing on a large serving platter. Drizzle the turkey with its juices and present with your favorite sides, like cranberry sauce and gravy.
