In the delightful journey of creating spicy bread and butter pickles, every ingredient plays a pivotal role in crafting that perfect balance of sweetness and heat. Imagine biting into a tangy, crispy pickle that dances on your taste buds with flavor!

  • Cucumbers: The backbone of this recipe, I recommend using fresh, firm cucumbers. They’ll maintain their crunchiness, providing the right texture that pairs beautifully with the pickling process.

  • Onions: Thinly sliced onions add a layer of sweetness and sharpness. I prefer using red onions for their vibrant color and milder flavor, which complements the spiciness.

  • Vinegar: A good quality white vinegar is essential; it gives the pickles their tangy kick. I find that using a combination of vinegar types can add depth to the flavor.

  • Sugar: Granulated sugar is crucial for achieving that classic bread and butter pickle sweetness. This sweetness balances out the heat from the spices.

Exploring the world of spicy bread and butter pickles reveals a delightful range of variations that can elevate your pickle game. If you’re ready to unleash your culinary creativity, here are some exciting ideas to play with.

Sweet Heat Twist

Amp up the flavor by introducing different sweeteners. Instead of traditional sugar, consider using honey or maple syrup. These alternatives not only add a unique depth but also a hint of natural sweetness that pairs beautifully with the spices.

Herb Infusion

What if you could enhance your spicy bread and butter pickles with fresh herbs? Adding sprigs of dill, thyme, or even basil can transform the flavor profile entirely. Simply steep the herbs in the brine while it cools to infuse their vibrant notes into your pickles.

Spicy Kick

For those who crave an even spicier kick, consider infusing your brine with chili flakes, jalapeños, or even ghost peppers. This addition will surely satisfy your craving for heat and give your pickles the fierce edge they deserve.

Crunch Factor

Texture is just as important as flavor. Adding sliced carrots or radishes to your spicy bread and butter pickles not only increases crunch but also adds visual appeal and variety. It’s a simple yet effective way to keep things exciting!

Experiment with Seasonal Flavors

As the season changes, so can your pickles. Think about incorporating flavors like ginger in the fall or citrus zests in the summer. Seasonal fruits can add a refreshing twist and highlight the pickling process. These variations invite adventurous culinary exploration right into your kitchen.

Spice It Up: Feel free to play around with the spiciness. If you love a good kick, add more red pepper flakes or even a splash of hot sauce to the brine. Each batch can be a delicious experiment!

Quality Vinegar: For the best flavor, opt for a high-quality apple cider vinegar. It complements the sweetness beautifully and adds depth to your spicy bread and butter pickles.

Storage Tips: Once sealed, these pickles can last for months in the fridge. However, try to wait at least 24 hours before tasting them; the flavors need time to meld for that perfect zing!

  • Total Time: 2 days
  • Yield: 4 pint jars 1x
  • Diet: Vegetarian

Description

Delicious homemade pickles to enjoy any time.

Ingredients

Scale
  • 2 pounds pickling cucumbers
  • 1 cup sweet onion slices
  • ¼ cup kosher salt
  • 1 tablespoon whole mustard seeds
  • 1 teaspoon crushed red pepper
  • 1 teaspoon celery seeds
  • 4 whole cinnamon sticks (or 8 whole cloves)
  • 2 cups granulated sugar
  • 1 ¼ cup apple cider vinegar
  • 1 ¼ cup white vinegar
  • Pinch turmeric (for color)

Instructions

  1. Set out a large mixing bowl and a mandolin slicer if you have one. Slice the pickles into even 1/8 inch rounds. Then quarter and slice the onion into short segments.
  2. Place the cucumber slices and onions in the bowl, and toss with kosher salt. Set in the fridge to rest for 1-3 hours.
  3. Meanwhile, set out four clean pint jars. Divide the mustard seeds, crushed red pepper, celery seeds, and cinnamon sticks between the four jars. (Sometimes I use whole cloves or allspice here instead of cinnamon sticks.)
  4. Once the cucumber slices have had plenty of time to rest, release their juices, and absorb the salt, rinse them in cold water to remove the excess salt. Divide the cucumber slices and onions between the four jars.
  5. Set a small saucepot over high heat. Add the sugar, apple cider vinegar, white vinegar, and turmeric. Bring to a boil.
  6. Once boiling, carefully ladle the hot pickling liquid into the jars, dividing it evenly. If some of the cucumbers are still sticking out of the top of the jar, uncovered, add a tablespoon or two of hot water to the jars. Screw the lids on tight and shake the pickle jars.
  7. If planning to make refrigerator pickles, let the pickles sit at room temperature for one hour, then moved to the refrigerator. If planning to can the pickles, follow proper canning procedure at this point.
  8. Let the pickles rest at least 48 hours before eating. The texture and flavor will improve over the next week.

Notes
