Description

This hearty beef chuck roast chili is perfect for a cozy dinner. Packed with spices, vegetables, and tender beef, it’s full of flavor and perfect for serving with your favorite toppings.

Ingredients

Scale
  • 4 pounds Beef Chuck Roast (cut into bite size pieces, approximately 1/2 inch)
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 4 Tablespoons Olive Oil (divided)
  • 3 Jalapeños (seeded and diced)
  • 1 Yellow Onion (diced)
  • 3 cloves Garlic (minced)
  • 2 Tablespoons Chili Powder
  • 1 Tablespoon Smoked Paprika
  • 1 Tablespoon Cumin
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoon Brown Sugar
  • 2 teaspoons Ground Coriander
  • 1/4 teaspoon Cinnamon
  • 2 Bay Leaves
  • 2 Chipotle Peppers in Adobo Sauce (finely chopped)
  • 1 can Crushed Tomatoes (14 ounces)
  • 2 Tablespoons Tomato Paste
  • 4 cups Beef Broth

Instructions

  1. Season the roast with salt and pepper.
  2. Heat 2 tablespoons of the oil in a large stock pot or dutch oven over medium high heat.
  3. Add the beef (in batches) and brown on both sides. Do not overcrowd the pan. Remove from heat and set aside.
  4. Add in the remaining oil and heat under medium high heat. Add in the diced onions and jalapeños. Sauté for 7-10 minutes until soft.
  5. Stir in the garlic and cook for 30-60 seconds until you can start to smell the garlic.
  6. Add the beef back to the pan and then stir in the remaining ingredients.
  7. Bring the mixture to a boil, cover and reduce the heat to low.
  8. Simmer for 2 hours until the beef is tender. Stir occasionally so that the ingredients are not sticking to the bottom of the pan.
  9. Remove the lid, increase the heat to medium and cook for 15-20 minutes until the sauce thickens based on your preference.
  10. Remove the bay leaves, serve with your favorite chili toppings and enjoy!

Notes

  • This recipe is perfect for leftovers, as the flavors develop even further after a day in the fridge.
  • Feel free to adjust the spice level by adding more or fewer jalapeños and chipotles.
  • Garnish with your favorite toppings like sour cream, cheddar cheese, or fresh cilantro.
